I am straying from my favorite breakfast of homemade 24-hour yogurt and/or BaEgg and trying something new. Welllllll, kind of. I am still using my yogurt. But I am altering the way I eat it. 

Usually, I add a bit of Stevia or honey to my yogurt. Maybe with some berries, bananas, or apples and cinnamon. Often, I add chocolate protein powder, cuz then I get more protein AND I get chocolate yogurt- can you imagine the heavenly taste? 

This weekend, I was craving something a little different and decided to make a chia pudding. I added a little lemon and viola- another super easy, go to breakfast!

INGREDIENTS

  • 2 cups plain greek yogurt
  • 2 cups milk of your choice (I used Elmhurst 2-ingredient almond milk)
  • 2 T honey
  • 1 tsp vanilla extract
  • Juice of 2 lemons (about 6 T juice)
  • ½ cup chia seeds
  • Toppings of your choice (fruit, nuts, seeds, coconut, cacao nibs, etc.)

DIRECTIONS

This is stupid easy! Blend the yogurt, milk, honey, vanilla, and lemon juice in a blender.

Put two Tablespoons of chia seeds in 4 separate bowls or jars (2T/ jar). I like using glass jars with lids so I can shake them up and then literally just grab a jar when I am ready to eat. Divide your yogurt mixture into each of the jars and mix them well so that the chia seeds are distributed throughout the yogurt. Put on the lids, give a good shake for extra measure, and put them in the fridge. They should sit for at least 6 hours before eating, just to let the chia seeds plump, which makes for a nice, thick chia pudding.

Top with whatever you want and enjoy!
