When you cut sugar from your diet, there are rare occasions when you feel like you get to indulge in a delicious treat. Over the years that I have been following the Specific Carbohydrate Diet, I have come to not really need or even want sweet treats. And when I do, I am pretty darn happy eating a date or 3! (Man, dates are so good!)In the beginning of my journey with SCD, I tried many desserts that other brilliant SCD cooks created. And frankly, I find most of them just not worth it. So, again, I eat a date.But sometimes, I want something sweet and yummy that isn’t a date.This is a fudgy, nutty, sweet, candy-like dessert that I LOVE. It is nutty, and since nuts are one of my favorite foods I am happy. But I also like that these are just small bites, and I can take a little piece out of the fridge or freezer when I want.Bonus is the fact that, like ALL my recipes, these are SO EASY! It only takes 3 ingredients and about 10 minutes to make.

INGREDIENTS

  • 1 cup of almond butter (peanut butter, cashew butter, etc.)
  • ¼ cup unsalted butter
  • 1 cup of honey

DIRECTIONS

In a small saucepan, melt the butter over medium low heat. Stir in the honey and bring to a boil. You may need to lower the heat to prevent the honey from burning, but it will come to a boil quickly, so watch carefully. Let it simmer for about 5 minutes.Next, add in the nut butter, lower the heat all the way and stir it in. Once completely combined, remove the pan from the heat.You can pour the mixture into molds, or you can line an 8 x 8 baking pan with parchment paper and pour the mixture into that.Pop it into the freezer for about an hour. If you use a baking pan, use a warm knife to cut the “fudge” into squares.You can store your candies in the freezer or the fridge, depending on how you prefer them. Enjoy!
