Being Valentine’s Day, I figured that I probably needed to post something chocolate and dessert-like. Then, I came across this recipe (which is not mine) and thought it would be a perfect post for Valentine’s Day, given that it is a ‘date’ pancake. Get it?

Anyway, I could not resist sharing this recipe with you because it is so delicious, easy, and combines two of my favorite foods, dates and eggs.

Hopefully you have tried my too easy to call a recipe Banana pancakes. This recipe harkens to the likes of the banana pancakes, but it is the tiniest bit more complicated because instead of mashing bananas, you soak the dates (gasp!).

Enjoy this date pancake for a sweet, yet healthy, breakfast or treat!

INGREDIENTS

For one:

  • ¼ cup Medjool dates, cut into quarters
  • 2 eggs
  • Butter
  • Ground cinnamon
  • Ground ginger

DIRECTIONS

Chop the dates and place them into a bowl.

Boil some water. Once boiling, pour the boiling water over the dates and let them soak for about 5 minutes, until they soften a bit.

Meanwhile, whisk the eggs. Whisk in a pinch of ground cinnamon and a pinch of ground ginger.

Add some butter to a saute pan over medium heat. Once the butter is melted, use a fork to pull the dates out of the water and put them into the butter. Let the dates saute in the butter for just a few minutes. Add in the eggs and cook until the eggs are slightly set. You can either fold in half as an omelette or flip over like a pancake.

Serve with an extra sprinkle of cinnamon and a pinch of salt.
