INGREDIENTS
- 2-3 medium sized zucchini, spiralized (you can always buy a package of zucchini noodles at the grocery store to save time!)
- ½ medium yellow onion, chopped
- 2 cloves garlic, minced
- ¼ tsp crushed red pepper flakes
- 1 bunch spinach, chopped
- 1 T olive or avocado oil
- Salt and pepper to taste
- Goat cheese (optional)
- Cooked protein of your choice
DIRECTIONS
Heat the oil in a saute pan over medium heat. Add the garlic, onion, and crushed red pepper and stir until fragrant. Stir in the spinach and keep it cooking for 2-3 minutes until the spinach is wilted. Add in the zucchini noodles and saute for another 2-3 minutes.
Season with salt and pepper.
Add in your protein and enjoy a very quick and simple dish!
