I was trying to make a Shakshuka recipe and realized that I did not have all the ingredients that I needed. I had, however, just stocked up on fresh ingredients and had some veggies that we sort of unplanned in my fridge. So I whipped up this quick, light, and super easy recipe.I made it for dinner and added eggs because I still wanted the runny deliciousness that goes along with shakshuka.The next day, I used the leftovers a little differently and added in some chicken breast, broccoli sprouts and cherry tomatoes. I drizzled on some olive oil and balsamic vinegar and had an amazing lunch.Here is my very yummy and easy recipe:

INGREDIENTS

  • 2-3 medium sized zucchini, spiralized (you can always buy a package of zucchini noodles at the grocery store to save time!)
  • ½ medium yellow onion, chopped
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper flakes
  • 1 bunch spinach, chopped
  • 1 T olive or avocado oil
  • Salt and pepper to taste
  • Goat cheese (optional)
  • Cooked protein of your choice

DIRECTIONS

Heat the oil in a saute pan over medium heat. Add the garlic, onion, and crushed red pepper and stir until fragrant. Stir in the spinach and keep it cooking for 2-3 minutes until the spinach is wilted. Add in the zucchini noodles and saute for another 2-3 minutes.
Season with salt and pepper.

Add in your protein and enjoy a very quick and simple dish!
