This is another one of my recipes that I wonder, “does this really actually qualify as a recipe?” I reply with a resounding, “yes!” (to myself), knowing that you all are like me and want super simple, super yummy foods.The thing I love so much about this “recipe” is that there are so many different textures. Because it is just a bunch of veggies and there is no required cooking, I took an extra 5 seconds to be creative in my cutting. You don’t have to do this, but it looks extra impressive to serve.
INGREDIENTS
- 2 english cucumbers, I used a julienne peeler to make them noodle-like
- 1 red bell pepper, sliced very thin
- 1 yellow bell pepper, sliced very thin
- 1 bunch of dinosaur kale, sliced very thin
- 2 large carrots, sliced thin (but when I make this again I will spiralize them!)
- ¼ head of purple cabbage, shaved thin using a mandolin
- 1 mango, cubed
- 1 bunch of parsley minced
Because I LOVE peanut butter, I tossed this with a peanut butter sauce so it was like a thai-inspired veggie noodle salad
- ½ cup peanut butter
- 2 T coconut aminos
- 2 T lime juice
- 1 T sesame oil
- 1 minced garlic clove
- 1 tsp minced fresh ginger
DIRECTIONS
Whisk together and pour it on the veggies. Serve with a protein of your choice.
