This recipe is yet another example of a delicious dinner that you can throw together using whatever you have threatening to go unused and rot in your fridge. This is one of the lovely things about eggs- they go with everything.So I took my good ol’ method of saute, add spice, and bake. And viola! A super yummy dinner or lunch or breakfast- another lovely thing about eggs.

INGREDIENTS

  • 1-2 T avocado oil

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 15 oz can of diced tomatoes, drained

  • 1 5 oz container of baby spinach, chopped

  • 1 bell pepper, chopped

  • 1 tsp salt

  • ½ tsp pepper

  • ½ tsp cumin

  • ½ tsp paprika

  • 2 cups chorizo, chopped

  • 6 eggs

  • 3 oz feta cheese, crumbled

  • 2 T freshly chopped parsely

DIRECTIONS

Preheat your oven to 325Heat a large skillet on the stove to medium high heat. Add the oil and when shimmering, put in the onions and let them cook for a few minutes until they are soft. Add the garlic and let it cook until fragrant, then the bell pepper.Season with salt and pepper. And stir in the spices, chorizo, and the diced tomatoes.Stir in the spinach and let it cook down until it is wilted.Remove the pan from the heat and create 6 indentations in the veggie mixture. Crack an egg into each “hole”. Then sprinkle the feta cheese on top.Put the pan into the oven and bake for 10-12 minutes, depending on how well done you want your yolks.Remove from heat and sprinkle with fresh parsley. Enjoy!
