I like to tell you guys all the time about how I don’t eat sugar. I am seriously sugar free- like I don’t eat it at all, EVER. This is because I have been able to put my colitis into remission by following the Specific Carbohydrate Diet and that makes a restrictive diet worth it to me.However, I am human and I sometimes crave something sweet. I eat fruit and honey and dried fruit, and incredibly those few sweets combined in various and numerous ways satisfies my sweet tooth.Usually once a week I allow myself one of these treats. Ice cream is one in my regular rotation, because it is ice cream! My husband gets mad when I call my version of ice cream ice cream because this is actually nowhere near what real ice cream is. BUT it is cold, sweet, and delicious, so it is still ice cream in my book.Like all of my recipes, this is stupid easy. So whip it up and enjoy it!

INGREDIENTS

3 very ripe bananas, peeled, broken into chunks and frozen

⅓ cup almond milk (I use plain, unsweetened)

¼ cup peanut butter or almond butter

⅛ tsp salt

DIRECTIONS

Combine all the ingredients into a high speed blender and blend until smooth. Transfer the mixture into a bread pan and freeze it for 3-4 hours. When you are ready to eat it, let it sit out for 10-15 minutes then it will be scoopable with an ice cream scoop.Nice, creamy, healthy “ice cream”!
