I am the first to admin that I am a big pizza snob. Growing up in NY, I was spoiled – there was truly no such thing as a bad slice of pizza. I am partial to thin crust, NY style, but enjoy a good Sicilian slice and even Chicago-style pizza every now and again. Since I’ve been trying to be better about going gluten-free and low carb, I discovered this very delicious gluten-free and keto friendly crust at Walmart and City Market and now can enjoy my own delicious (NY-ish) pizza that is so simple to prepare, well balanced, very healthy, and very versatile.

Sometimes, I’ll add air-fried sliced eggplant, mushrooms, black and green olives, pepperoncini peppers, pineapple, plant-based sausage, pepperoni, or meat crumbles (of course if you do eat meat, you can add any variety that you like – I just happen to be a vegetarian)

INGREDIENTS

Sauce:

  • 1 10oz. can low sodium tomato sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil flakes
  • 1/4 tsp dried parsely flakes
  • 1/4 tsp fine sea salt
  • 1/8 tsp ground black pepper
  • 1/4 tsp italian plus flax seed spice (optional)
  • 1/8 tsp red pepper flakes (optional)

Other Ingredients:

  • 2 gluten-free, grain free, Keto Pizza Crusts (I like Cali’flour foods)
  • 1/2 cup shredded mozzerella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup grated romano cheese

DIRECTIONS

Preheat the oven to 400. If you have a vented pan, Spray with a bit of cooking spray and place both frozen crusts on top. (DO NOT USE pizza stone or place directly on oven rack). If you do not have a vented pan, then line a baking sheet with parchment paper and place both keto crusts on the parchment paper. Bake at 400 for 10-12 minutes on the lowest oven rack. Remove from the oven and let the crusts cool for 10 minutes. 

Mix all the tomato sauce ingredients together.

Spoon 2 large ladels full of sauce onto each of the crusts (or as much tomato sauce as you prefer).

Sprinkle the cheese mixture on top (plus any other toppings you prefer) and place back in the oven on low broil for 5 minutes or until the cheese has browned to your preference.

Remove from oven and let cool for another 5 minutes. 

Use a pizza cutter to slice and ENJOY!!
