One of the best things about winter is squash. I LOVE squash- the warm, creamy taste, the naturally sweet flavor, and the starch-like texture.

Another great thing about winter is soup. Because who doesn’t love soup.

So here is a super easy, super fast way to make a delicious winter squash soup that will warm you up!

INGREDIENTS

  • 2 shallots, sliced thin
  • 1 T olive oil
  • 1 T butter
  • 3 cups butternut squash, peeled, deseeded and diced
  • 1 cup apple, diced
  • 4 cups bone broth
  • ¼ tsp cayenne pepper (to taste)
  • salt and pepper
  • 1/4 cup heavy cream, coconut milk, or yogurt

DIRECTIONS

Saute shallots in olive oil over medium heat until soft but not brown. Melt the butter into the pan and add the squash and apple. Sprinkle generously with salt and pepper and cayenne if you choose to use it. Let it saute for about 10 minutes, until the squash starts to soften. Add bone broth and bring to a simmer for about 20 minutes until squash is fork tender.

Transfer the contents of your pot to a high speed blender or food processor and blend until very smooth. Stir in the heavy cream/ coconut milk/yogurt and taste and adjust seasoning.

That’s all it takes to make a creamy butternut squash soup!
