If you have ever made ANY of my recipes, you know that nearly everything I make is easy. I don’t have very much creativity, nor do I have the time to dink around the kitchen for hours to make gourmet meals. My goal in life is to make eating healthy as easy as possible.

I am always disappointed when I figure out that eating healthy is harder than not. It is harder to eat fruits and veggies than grab a bag of chips or pretzels. It is harder to cook than to microwave a frozen meal or go through a drive-thru.

My limited Specific Carbohydrate Diet makes it nearly impossible to eat at a restaurant or even at my mom’s house. So, I cook! I cook. I cook. I cook. I also prep. I menu plan, shop from a list, wash and chop, store and freeze. Then, I repeat.

Meals like this Honey Mustard Salmon make this not only possible, but completely doable. This is literally so easy I can hardly call it a recipe, but it left my family licking their plates. Seriously.

INGREDIENTS

1 pound Salmon (ALWAYS wild caught)
1 Tbsp honey
1 Tbsp whole grain mustard
1 avocado
1 Tbsp Avocado oil

DIRECTIONS

Cut your salmon (or have the butcher do it) into 4 equal-sized filets. Pat them dry with paper towels and generously grind some salt and pepper on top.

Heat the avocado oil in a saute pan over medium heat. When the oil is hot, put the salmon, skin side down in the pan. Leave it undisturbed for about 4 minutes.

Meanwhile, stir the honey and mustard together in a small bowl.

Flip your salmon over and sear for another 4 minutes.

Remove the salmon and plate. Drizzle the honey mustard sauce on top of each filet, top with avocado, and serve with your favorite veggie.
