I have told you before about how I don’t eat much dessert. Not because I don’t like it or something crazy like that, but because I know I don’t really need it. I am always, always body conscious and of course health conscious as well.Also, when you don’t eat sugar or grains or any processed foods, it is hard to make a dessert that actually tastes good. I usually opt out- don’t bother to try to make dessert- or go for fruit.While bananas are not in season in the summer, per se, this is a fruit that is delicious frozen. It is made more delicious by adding in my favorite food, peanut butter. And even MORE delicious when covered with chocolate!I have seen iterations of this on social media and have totally wanted to try it. So here is my version:

INGREDIENTS

  • 4 bananas, peeled and cut in half
  • 1/2 bag of Lily’s chocolate chips (or chocolate chips of your choice)
  • Peanut butter (or other nut butter of your choice)
  • 2 tsp coconut oil

DIRECTIONS

Put a piece of parchment paper on a sheet pan and peel and cut your bananas in half. Insert a popsicle stick into one end of each banana, then put the bananas on to the parchment paper. Freeze for at least an hour in the freezer. Cover each banana with peanut butter. This is super messy ,at least the way I did it, which was with a knife.Lick your fingers, then put the PB covered bananas back into the freezer.Put the chocolate chips and the coconut oil together into a microwave safe bowl and microwave until the chocolate is melted. Give it a good stir so it is nice and smooth. Take the bananas out of the freezer.I am sure there are many ways that you can cover the bananas with chocolate, but I take a spoon and collect some chocolate onto it, hold the banana over the chocolate bowl and spill the chocolate on to the banana. Then I use the back of the spoon to spread it out a bit and cover the entire banana. Lick your fingers again.Put the chocolate covered bananas back onto the parchment covered sheet pan and freeze again for at least 20 minutes.You guys, this dessert is heavenly!
