I threw this one together as a super quick meal with veggies that I had in the fridge. I am normally a meal planner and know exactly what I am going to make for dinner every night, but every once in a while, I stare into the fridge and wonder what to make. This meal came together in about 15 minutes, making it SO easy and fast.

INGREDIENTS

2 packs of frozen riced cauliflower|
1 can of black beans, rinsed and drained
1 red onion, chopped
1 red bell pepper, chopped
1 yellow pepper, chopped
1 5oz container of baby spinach, chopped
1 can of diced tomatoes
Avocado
Cilantro
Salsa
1 tsp chili powder
¼ tsp cumin
¼ tsp salt
¼ tsp pepper
¼ tsp sweet paprika

DIRECTIONS

Heat a big skillet over medium heat and add in a Tbsp of avocado oil. Toss in the onions and let them cook, until lightly browned, for about 5 minutes. Add in the packets of riced cauliflower and stir until it is no longer frozen. Stir in the black beans and all of the spices and allow everything to cook together.

Finally, add in the chopped spinach and the diced tomatoes. Let the spinach wilt and the tomatoes to reach temperature with the rest of your pan. 

Remove from heat, top with salsa, avocado and cilantro.

That is literally all there is to it!
