½ head of purple cabbage, cored and thinly sliced 1 red onion, peeled, cut in half, and sliced into half moons 1 apple, peeled and cut into small chunks 1 cup apple juice 1 T apple cider vinegar 1 T avocado oil Salt to tasteDIRECTIONS
Heat a large dutch oven over medium heat and add in your avocado oil. When it is hot, stir in the onion and apple and saute for a few minutes, until they start to soften. Add in the cabbage and give it a good stir to combine. Salt the veggies, then add the apple cider vinegar and the apple juice. Continue to cook, over medium heat, stirring occasionally, for about 20 more minutes.
