You guys, cabbage is one of my favorite vegetables ever. It is versatile, delicious and beautiful. I always buy purple cabbage because I love the color so much. My husband also loves cabbage so I am always trying new ways to make it. This recipe combines two of my favorite foods, cabbage and apples. You can’t go wrong combining this cabbage dish with any protein, but we really love it with mild Italian pork or chicken sausage.

INGREDIENTS

½ head of purple cabbage, cored and thinly sliced 1 red onion, peeled, cut in half, and sliced into half moons 1 apple, peeled and cut into small chunks 1 cup apple juice 1 T apple cider vinegar 1 T avocado oil Salt to taste

DIRECTIONS

Heat a large dutch oven over medium heat and add in your avocado oil. When it is hot, stir in the onion and apple and saute for a few minutes, until they start to soften. Add in the cabbage and give it a good stir to combine. Salt the veggies, then add the apple cider vinegar and the apple juice. Continue to cook, over medium heat, stirring occasionally, for about 20 more minutes.
