It never ceases to amaze me how many different foods, flavors, and textures actually taste good together. Now that fruit is in high season, I have been experimenting with how I can add it to my main dishes, and it never disappoints.
Here is another, yes, another super simple, delicious meal that you can throw together in less than 30 minutes.
4 pieces salmon
Salt and pepper to taste
1 avocado, diced
1 cup strawberries, diced
2T basil, chiffonade
1 clove garlic, minced
1/4 cup balsamic vinegar
1/4 cup olive oil
1 t dijon mustard
Salad greens
DIRECTIONS
Heat your grill to medium. While it is coming to heat, season your salmon with salt and pepper. Put the salmon skin side down and grill until it is done. Depending on the thickness of the salmon, it will take between 5-10 minutes.
Meanwhile, in a medium bowl, combine avocado, strawberries and basil and season with salt and pepper. Make a dressing by adding salt, pepper, mustard, balsamic and olive oil in a glass jar and shake. Dress the salad greens with dressing. Spoon the avocado and strawberries over salmon and enjoy!
