Spring Salad with Chicken and Strawberries

Enjoy spring strawberries and vegetables in this easy, healthy salad recipe!

Grilled Chicken
1 pound chicken breast
1 cup of lemon juice
1/2 cup honey
2 Tbs salt

4-6 cups of mixed salad greens
1 cup sliced strawberries
1 cup beets, roasted and diced
1 bunch asparagus, lightly steamed and chopped
2 carrots, chopped
2 scallions, chopped
1/4 cup sliced almonds
2 oz goat cheese (optional)

1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
1 tsp dijon mustard
salt and pepper to taste

Mix together the ingredients for the brine and let the chicken breasts marinate in the brine for 24 hours. Remove from the brine and grill over medium heat until cooked through, about 6 minutes per side.

Mix together the dressing ingredients together in a blender or whisk together in a bowl.

Assemble the ingredients for the salad in a large bowl, top with grilled chicken slices and dressing to taste.
