This rich, delicious strata is a perfect dessert for summer with the fresh berries coming into season. Try this for your next family occasion.
4T butter (or ghee, if dairy-free)
1 1/2 c whole milk or heavy cream (coconut milk, if dairy free)
1/2 c maple syrup, plus extra for serving
1/2 c cottage cheese (or Kite Hill ricotta cheese, if dairy free)
1 loaf gluten free bread, diced
Juice and zest of 1 lemon
1 1/2 t vanilla
2 1/2 cups berries of choice cut into bite.sized pieces
Heat oven to 350. Grease a 13×10 baking dish with 1T butter.
In a large bowl, crack and mix eggs. Add milk, maple syrup, lemon, vanilla and mix until combined. Add bread and 2 cups berries and stir. Pour into baking dish.
Bake strata 40-50 minutes until set. To serve, garnish with remaining berries and maple syrup.
