This super easy spinach dip is a potluck favorite and–with the right ingredients–good for you!
1 carton of baby spinach
1 jar marinated artichoke hearts, drained and rinsed
2 cloves garlic, smashed then minced
1 small onion, diced
4-6 large mushrooms, chopped
1/2 cup porcino romano cheese, shredded
8 oz cream cheese or Kite Hill dairy-free cream cheese
1 tsp salt
1/4 tsp pepper
1 tsp ground nutmeg
Preheat oven to 350.
Add a little avocado oil to pan over medium heat. When it is hot, stir in the garlic and onion and saute until soft. Stir in the spinach and artichokes and cook until wilted.
Put the mixture from your pan into a food processor and add the remaining ingredients. Pulse until everything is combined.
Empty the food processor into an ovenproof bowl or pan and bake it in the oven for 20 minutes.
Enjoy your spinach dip with crackers, celery, carrots, or anything else you want!
