Makes one salad:
A few slices of Wild Smoked Salmon
One or two pasture- raised eggs. fried or poached
.5 ounces feta cheese OR almond ricotta if you are dairy free
5 or so kalamata olives
Half an avocado, sliced
Romaine lettuce, washed, dried, and cut into bite-sized peices
A handful or two of baby spinach
lemon juice
olive oil
salt and pepper, to taste
Assemble the lettuce and spinach on a plate. Add the cheese, avocado slices, and olives. Layer the salmon on top of the greens and top with the egg.
Drizzle with olive oil and a tbsp or so of lemon juice. Salt and pepper to taste.
This salad is so, so good! I made mine without the salmon, because I am not a fan of smoked salmon, and it was delicious. My husband made it again the next day for lunch, because he just had to have it again.
