Oven Roasted Pork Tenderloin with Pineapple Kale
2 pork tenderloins
1 T honey
1/4 cup coconut aminos
3T orange juice
Salt
Pepper
Olive oil
Baby kale
2 cloves garlic, minced
2T pineapple juice
Salt
Red pepper flakes
Heat oven to 350.
Whisk all ingredients listed under pork. Lightly oil a shallow baking dish and place pork in it. Pour sauce over and bake about 45 minutes. You may want to baste 2 or 3 times throughout cooking.
After removing pork, let rest 5 minutes before slicing.
Heat a large saute pan. Once hot, add a little olive oil. Add kale, garlic, salt and pineapple juice. Saute until wilted, about 1 minute. Add red pepper flakes to taste.
