Cauliflower Nachos

“Chips”
2 heads of cauliflower, sliced
salt, to taste
pepper, to taste
1/8 tsp cayenne pepper
2 Tbs olive oil

Toppings
1 pound ground beef, turkey or pork
1 cup chopped spinach
3 cloves minced garlic
1 chopped onion

Optional additions
avocado slices or guacamole
sliced black olives
salsa
sour cream
chopped green onions

Preheat the oven to 425. Put the sliced cauliflower heads in a bowl and mix well with the olive oil, cayenne, salt and pepper, until well covered. Spread evenly on a baking sheet and roast until golden brown, about 25 minutes.

Meanwhile, sweat the onions in a saute pan over medium heat. As they release some liquid, add the garlic and stir until fragrant, about 30 seconds. Add in the ground meat and cook until brown. Finally, in the last minute of cooking, add in the chopped spinach.

Remove the meat mixture from the pan and spread it out on top of the roasted cauliflower. Add 2 cups of shredded cheddar cheese and put the pan back in the oven until the cheese is melted.

Add any optional additions that you would like to make this nacho dish complete. Enjoy!
