Easy, No-Bake Butter Cookies

4 T butter
1 cup almond flour
1 t vanilla extract
2 T Swerve, Erythriyol, or Xylitol

Melt butter in a small saucepan over low heat. As soon as it is melted, remove from heat and stir in the remaining ingredients. Form into small, tablespoon sized balls or fill into candy molds, like I did here. Let them firm up in the refrigerator or freezer and then gobble them down. A perfect healthy, sweet treat!
