This super quick, super easy, but still healthy shrimp recipe will quickly become a family favorite!

Garlic Lemon Shrimp

1 pound shrimp
3 cloves garlic, minced
2 lemons – one sliced, one juiced
1/4 -1/2 cup chopped fresh parsley
1/4 cup shredded Parmesan cheese (optional)
1-2 Tbs. Olive Oil
Salt and Pepper to taste

Heat oven to 425*.

Slice one lemon and spread it out on a sheet pan. In a bowl, toss the peeled and de-veined shrimp with olive oil, the juice of one lemon, parsley, and garlic. If you are using the parmesan, add that to the bowl as well. Toss well and then spread on the sheet pan on top of the sliced lemons.

Bake for 10-15 minutes, until the shrimp is pink and cooked through.

Enjoy this meal over zoodles, green beans, or a nice green salad.
