A Healthy Italian Recipe: Meatballs over Zoodles

2 pounds ground Italian Sausage
1 cup pork rinds (I like Epic brand), crushed
1/2-cup onion, chopped
2 cloves minced garlic
1 egg
2 Tbs fresh-chopped parsley
Salt and pepper to taste
Coconut oil
4 large zucchini, spiralized or julienned
1 jar of your favorite tomato sauce
Fresh parsley and basil for garnish

 
To prepare this healthy Italian recipe, start by pre-heating your oven to 350.

Heat a bit of coconut oil in a skillet over medium heat. Mix together the sausage, pork rinds, onion, garlic, eggs, and spices. Form into small one-inch balls and drop the balls into the skillet. Lightly sauté until the meat is browned on all sides. Then, put the balls on a parchment paper lined sheet pan and finish cooking them int the oven for about 10 minutes, until cooked through.
 
Meanwhile, spiral or julienne those zucchini. Add the zucchini into the same sauté pan that you used for the meatballs and add a little salt. Lightly sauté the zucchini noodles into the are slightly limp, about 2-4 minutes. Be careful not to overcook them- they can get soggy!
 
Warm up your tomato sauce.
 
When everything is finished cooking assemble the meatballs on top of your zoodles, drizzle with tomato sauce and garnish with some freshly chopped parsley and basil. Enjoy!
