A delicious garlic shrimp recipe with super healthy beet “noodles” – yummy and nutritious!

Ingredients:

1-pound shrimp, peeled and deveined
4T-unsalted butter
1/4c white wine
2 cloves garlic, minced
Salt
Pepper
Red pepper flakes
Parsley, minced for garnish
6 Beets, red or golden, peeled and spiralized (can also use zucchini and butternut squash or any combo). If you don’t have a spiralizer, you can julienne the veggies instead.
Olive oil
Salt
Pepper

Directions:

Heat oven to 350*. Prepare the beets and toss in a bowl with salt, pepper and olive oil. Spread the beets on a sheet pan and bake for 15 minutes.

Meanwhile, melt the butter over medium heat in a large sauté pan. Add shrimp, salt and pepper, toss to coat. After a minute or so, add the garlic. Stir and cook until just fragrant. Add wine and simmer until shrimp are just pink, about 6 minutes. Adjust seasoning.

Serve the shrimp over beet noodles with sauce from the pan. Top with red pepper flakes and parsley.
