A yummy twist on a favorite classic. If you love french onion soup, you’ll love this easy cold weather dinner recipe.

French Onion Chicken

1-pound chicken thighs
2 onions, sliced
2 cloves garlic, pressed
3 T avocado oil, butter, or ghee
Salt and pepper
1-1/2 cups broth
1 cup gruyere cheese, shredded

Heat a skillet over medium and add you cooking fat of choice.  Once the oil is hot, add the sliced onions, season with salt and pepper and cook about 30 minutes, stirring occasionally until caramelized.  Add garlic and cook until fragrant.  Remove onion mix, set it aside on a plate and wipe out skillet.

Season chicken with salt and pepper.  Re-heat the skillet over medium-high and add 1 T butter.  When hot, sear chicken for 4 minutes, flip and cook 2 minutes.  Add the broth and let simmer until the broth has reduced to about 3/4 cup and the chicken is cooked through.

Add the caramelized onions and garlic back into the skillet, and spinkle the Gruyere cheese over the top. Once the cheese is melted, it is ready to serve! I like mine with Brussels sprouts.
