This is a great recipe for hot summer nights. It’s easy to make, delicious to eat, and a cool, healthy treat!

Cucumber Soup

2 english cucumbers, peeled, seeded and roughly chopped
1.5 cups full fat plain yogurt (greek is good)
3 T lemon juice
1 t lemon zest, chopped very small
2 T italian parsley
2 T fresh oregano
1/3 cup fresh dill
1 clove garlic
1 T shallot or red onion
1/4 cup olive oil
Salt

Garnish:
Tabasco
Diced Red Onion
Drizzle of Really Good Olive Oil

Puree in a blender until smooth.  Chill 8 hours to let flavors blend.
Garnish and enjoy!
