I get so bored with chicken. I can really only stand to eat it once a week because it is just kinda boring. My sister came up with this recipe and it really packs a punch! Bye bye boring chicken! Hello, tasty yummy! Try this one with a nice green salad on the side.

INGREDIENTS

4 chicken breasts
½ cup plain kefir or buttermilk (if you are feeling daring)
1T dried parsely
1T dried oregano
Salt
Pepper
Red pepper flakes (optional, but recommended)
2T avocado oil
4 strips of bacon, cooked and diced or broken up into small pieces
Cheddar cheese, shredded (optional)

DIRECTIONS

In a shallow baking dish, mix together the kefir or buttermilk and herbs and marinate the chicken for at least 2 hours, preferably overnight.

When you are ready to cook, preheat the oven to 350.

Place a large oven-proof skillet on the stove and heat to medium. Add the oil to the pan and allow it to heat up. Once the oil is shimmering, add each chicken breast and lightly brown each side. Remove the pan from the stovetop and place it into the hot oven and cook until the chicken is cooked through, about 10 minutes.

Top each slice with cheese and some crumbled bacon, turn the oven to broil, and cook until the cheese is bubbly.
