Looking for a quick and simple recipe that goes over great with the entire family and is perfect for cold winter nights? You will never go wrong with this incredibly satisfying, gluten free, well-balanced, low calorie recipe. Contrary to popular belief, Arborio rice has no wheat gluten and therefore makes for a great gluten free meal.

Ingredients List
1 serving extra virgin olive oil cooking spray
5 fresh green onions, chopped
2 TBS red onion, chopped
1 cup arborio rice
3 cups vegetable broth or chicken broth

Asparagus and mushrooms

2/3 cups of mushrooms, chopped (white, portabella or mixture)
8 thick spears of asparagus, sliced
5 TBS of grated parmesan
1/4 cup of dry white wine (cooking wine works too) – optional
1 TBS fresh parsley, chopped – optional

 

Directions
Spray a large pan with the olive oil (cover the entire pan)
Saut├ęs the onions on low heat until soft (approximately 5 minutes)
Turn the heat to medium high and add the arborio rice. Mix for 2 minutes.
Add 1/2 cup of the broth and mix for 4-5 minutes until absorbed.
Continue to add 1/2 cup of broth at a time until absorbed.
Add mushrooms & asparagus and cook for an additional 4-5 minutes
Add Parmesan cheese, wine and parsley. Mix all together and remove from heat.

This recipe makes 6 servings at 177 calories per serving.
