This has to be one of the most refreshing recipes in my recipe repertoire. It is so easy to throw together and has an abundance of vitamins, fiber and it is also high in protein. A half cup of this salad  fills you up for hours. My Dad used to make it all the time to help us break the fast on Yom Kippur because it is light and easy on your digestive system and it goes great with Bagels!

Ingredients List

1/2 cup organic sour cream
1 cup organic small curd cottage cheese
1 cup chopped cucumbers
1/2 cup chopped radishes
1 cup shredded carrots
1 cup chopped celery
1 cup chopped red, yellow or orange pepper
1/4 cup finely chopped red onion
1/2 cup chopped green onion
1/8 cup chopped fresh dill weed
1 tsp salt
1/4 tsp fresh ground pepper
1 Tbsp chopped fresh parsley

Optional:
1/2 cup chopped tomatoes *you might want to sprinkle these on top and not mix into the bowl initially. Over a few days, it would cause the salad to become very wet.

Add all the ingredients together and mix well.

This recipe serves 8 (1/2 cup per serving) @ 89 calories per serving
