This salad is, by far, the most refreshing, delicious salad that I chow down on at least twice a week. It is so easy to make and has all the food groups that you would need for a balanced meal – all in one salad.

It is perfect for both the hottest days of summer and the coldest days of winter. The best part about it is that if you have your own garden, four of the main ingredients grow like wildflowers. Check it out below…

INGREDIENTS:

  • 2 cups arugula (you could sub spinach, romaine, kale, or any leafy green that you enjoy eating)
  • 1 large ripe avocado, chopped
  • 1/2 cup chopped English cucumber
  • 1 cup sugar snap peas, sliced
  • 2 Tbsp chopped fresh mint leaves
  • 2 Tbsp chopped fresh basil leaves
  • 1/4 cup shelled, roasted & lightly salted pistachios
  • 1 burrata cheese ball *if you don’t have burrata, substitute a combination of 1Tbsp fresh mozzarella, mixed with 1 Tbsp Ricotta and 1 Tbsp cottage cheese
  • 2-3 spritzes of Extra Virgin Olive Oil Spray
  • Juice from one ripe lemon
  • pinch of sea salt to taste
  • pinch of pepper to taste

DIRECTIONS:

Wash all the produce thoroughly.
Mix all ingredients together with the exception of the cheese
Place the cheese on top
