A Sweet Treat for Your Sweetie

I try my hardest to avoid sugar. I really do. I do also have the philosophy that I am going to enjoy a treat on a special occasion. I will eat a gluten free dessert out at a fancy restaurant and I experiment at home with Paleo baked goods and desserts, too. I am also a complete sucker for dark chocolate, and with Valentine’s Day around the corner I thought I would whip up a simple, Swerve-sweetened chocolate treat for myself (and maybe my husband and kids can have one or two).

Like all of my recipes, this one is stupid easy.

½ cup honey
¼ tsp peppermint oil
1 ½ cups of dark chocolate chips
3 ½ cup Swerve confectioner’s sweetener

Combine the honey and the peppermint oil and stir them until well combined. Slowly add in the Swerve. It will get harder and harder to mix the more you add, but you are trying to make a dough-like substance. Once it is all combined, roll it out onto a piece of parchment paper and cut out little discs with a small cookie cutter. Put all the peppermint discs onto a sheet pan and freeze for 15-20 minutes.

Meanwhile, melt the chocolate chips in a double broiler until smooth. Remove from heat but make sure to keep the chocolate warm enough that it stays smooth.

When the peppermints are frozen through, drop one carefully into the chocolate mix so that it is fully covered. I used two forks to pull the chocolate covered peppermint from the chocolate. Place it onto another parchment covered sheet pan and continue to work through each peppermint, one at a time, until they are all chocolate covered. 

Let the chocolate harden in the refrigerator.
