I live in a household full of salsa lovers. I am not kidding when I tell you that ‘some’ of us eat salsa every day. Every. Day. I, myself, am not one of the ‘some’ people, but I do love salsa. I have made my own in a multitude of ways, including tradition, strawberry salsa (yes really), and this one here with mango and avocado, is one of my favorites.

It goes well with chips, of course, but I also love it on top of chicken and fish. Last night, I put giant scoops of it on top of cauliflower rice and salmon. There were no leftovers.

To feed 4 or so people:
One mango, peeled and diced
One avocado, peeled and diced
One red bell pepper, diced
¼ cup diced red onion
⅓ cup chopped cilantro
One lime, juiced
1 jalapeno, seeded and diced (optional, if you want a little spice)
Salt and pepper, to taste

Combine all the ingredients and let it sit for a few minutes  for the flavor to really take hold. Enjoy!
