It seems like baking is the thing to do right now. I think it has to do with finding comfort in the knowledge that something you do is going to have a specific outcome. I am writing this in the midst of COVID-19 and everything feels so uncertain and out of our control. Baking is definitely an enjoyable thing and, of course, it is also comforting to eat. I know a lot of us are struggling right now to find comfort in any way we can!

Preheat your oven to 350. Line a loaf pan with parchment paper.

Mix together in a stand mixer:

4 eggs
1 tsp baking soda
1 cup almond butter
2 scoops of chocolate collagen (I used Further Foods brand)
⅓ cup of melted chocolate (I melted ⅓ cup of chocolate chips in a double broiler)

Pour the mixture into your loaf pan and bake for about 35 minutes. Cool for about 15 minutes then remove the bread from the pan and allow it to cool completely before slicing. Try not to eat the whole loaf in one day. Good luck!
