Don’t let the holidays ruin your healthy habits! This yummy dessert can be made gluten free or vegan and is a healthier version of a fall favorite!
Apple Crumble Bars
1.5 cup whole-wheat pastry flour (you can also use white flour, spelt, or oat flour)
1/2 tsp baking powder
1/4 tsp salt
1/2 cup coconut sugar, brown sugar, or sucanat
pinch stevia OR 1 additional tbsp brown sugar
1 1/4 tsp cinnamon
1/4 cup plus 3 tbsp grass fed butter (you can use a vegan alternative like Earth Balance)
2 tbsp milk (your choice – cow, almond, etc.)
2 cups peeled, chopped apple
2 tsp cornstarch or arrowroot
3 tbsp pure maple syrup or agave
1 tsp pure vanilla extract
Mix together the first eight ingredients listed. Smash the butter with a fork and break up really well so it will form crumbs. Put 2/3 of this mix into a 4×7, glass dish or small pan that you’ve oiled, and press it down firmly. In another bowl, mix the remaining ingredients. Layer them into the pan, then top with the rest of the first mixture and press down. Bake for 45 minutes at 350 F, then let cool for a half hour before you cut it into bars. For a crispy bar you can store uncovered. To keep them soft, just wrap in saran wrap! Yum!
I have to chuckle just a bit. I am hoping to be a new patient. Was scheduled but life got in the way. I was happy to get this email with the recipes and an opportunity to receive more of them.
I was reading up on some of the tips to cut down on plastic and just had a bit of a laugh after reading on that subject to see the end of the above recipe called for wrapping in——–plastic.
This is not a negative comment for sure. I find it difficult to wean my household completely away from toxins though I am trying to do better at it. There are some times when you just want to use something like “saran wrap”. Thanks for brightening my day.
