Chicken Sweet Potato Stir-Fry

Stir-Fry: An easy and delicious meal

1-2 Tbs avocado or coconut oil
1 pound chicken breast, cut into one inch cubes
1 container of mushrooms, sliced
1 small onion, chopped
3 cloves of garlic, minced
1 sweet potato, peeled and chooped into 1 inch cubes
1 bunch dinosaur kale, sliced thinly
1 Tbs rosemary, minced
3 Tbs lemon juice
salt and pepper, to taste

Heat a large saute pan or dutch oven to medium heat. Next, add oil, sweet potato and salt and saute until the potato is lightly browned, about 15 minutes. Add the chicken and cook until it is no longer pink, about 10 minutes. Stir in the onion, garlic, and mushrooms for another 5 minutes. Finally, mix in the lemon juice, rosemary, and sliced kale and cook just until the kale is tender. Serve while it is hot!
