Healthy and Hearty – Chicken and Squash Recipe

Chicken Squash Stir Fry

1 pound chicken breast, diced
1 butternut squash, peeled, seeded and diced
Avocado, coconut or olive oil
1 small onion, minced
1 clove garlic, minced
2 T butter
1 head kale, stems removed and diced
1/2 t chili powder (or to taste)
Salt and pepper to taste

 

Preheat oven to 400 and prepare the butternut squash. Place the diced squash in a sheet pan and drizzle with avocado, coconut, or olive oil. Sprinkle with salt. Next, place the sheet pan in the oven and roast until caramelized (30 minutes).

Meanwhile, heat a large skillet over medium heat and melt the butter.  Add the diced chicken breast, season with salt and pepper and sauté. Stir occasionally until the chicken is cooked through.  Reduce the heat to medium low and add onion and chili powder.  When onion is translucent, add kale and garlic and cook until wilted.

Finally, add the cooked butternut squash to the pan, stir, and serve it up!
