Easy Pork Tenderloin
2 small pork tenderloins, about 1 pound each
2 Tbs coconut sugar
1 Tbs chili powder
1 tsp garlic powder
1/2 tsp cumin
1 tsp each of salt and pepper
1/2 tsp crushed red pepper flakes
Preheat the oven to 350.
Mix the sugar and spices together in a small bowl. Add enough olive oil to make into a paste.
Lay the tenderloin on a sheet pan and, using your hands, rub the spiced paste all over the loin.
Bake 25 minutes until pork tenderloin reaches 155 degrees.
Let rest 5 minutes then slice and serve. Easy and delicious!
Pairs well with a Cauliflower Mash!
